Poach this slowly to produce a rich, nutritious ham stock - use this for pea soup, lentil soup, vegetable soups and all ham and bacon based casseroles. After poaching, remove the shank from the stock and either flake off the ham meat and keep to combine with your dish, or glaze the shank as you would a ham and pop into a hot oven to melt the glaze.
