Excellent for slow roasting. The shoulder has more fat than the loin or the leg. It has a melting texture, and crispy crackling. In particular it is uniquely suitable for cooking in a very low oven, a technique resulting in supremely tender pork. Pork shoulder is the cut to use if you wish to cook pulled pork - order twice the weight that you wish to serve, as the fat will render out of the pork as it cooks.

Cooking Method

For pulled pork order twice the weight of pork you wish to serve when it is cooked.  Cook the pork shoulder very slowly at an oven temperature of 150 degrees C until the internal temperature of the pork reaches 93 degrees C - this will take 6 or 7 hours.  Serve with Pheasants Hill Farm homemade barbecue sauce

Storage: Your meat will arrive frozen. We believe freezing is nature's best way of storing wholesome food, ensuring minimum food waste. We freeze it in convenient size freezer packs, which means you can take out the amount you need and never have to waste any food. To thaw a pack, simply drop the thick protective vacuum pack in cool water, and it will thaw in a few hours giving you maximum convenience and flexibility. We recommend that you store your Pheasants Hill Farm meat in your freezer. Once defrosted, please store your meat in your refrigerator, and cook thawed pork within 24 hours of defrosting.
