Guinea fowl was originally a game bird, but is now domesticated and available all year round, guinea fowl has a flavour somewhere between chicken and pheasant - try casseroling guinea fowl in red wine with chestnuts. We source this specialist gourmet guinea fowl from French poultry farmers in the beautiful Loue region of France. One bird will serve two greedy eaters, or four average eaters. Guinea fowl is a slow-growing breed which reach maturity at 90 to 100 days. Our guinea fowl are brought in from France. They are fed a 100% vegetarian diet of grain, grass and leaves, which you can taste in the meat. Guinea fowl has lots of flavour, but we prefer them pot-roasted as they’re quite lean. You can substitute guinea fowl for just about any chicken recipe. The flavour is similar to that of chicken but it has a hint of gaminess, which means it goes well with flavours such as chestnuts, apples, herbs, bacon, cider or brandy. When roasting, the bird needs to be basted at intervals with butter, or covered with pork or bacon fat to keep the meat tender and moist. Casseroling is a perfect cooking method for guinea fowl because slow cooking the meat in liquid ensures it is sweet and tender with a flavoursome sauce.
