You can place a pre-order for a fresh free range turkey now, but please note that fresh turkeys will ONLY be available for delivery or collection from 17th December onwards.

These turkeys are brought in as day old turkey chicks to County Down in May, and live a free range life for 6 months. They are fed on pellets, corn and wheat grown on the farm, and scratch and forage on 160 acres of lush pasture. They reach maturity slowly (compare their 24 weeks of life, to the 10 weeks it takes an indoor reared turkey to reach the same weight) and this longer life allows their bones to mature, and for the meat to develop a proper marbling of fat. These white turkeys are dry plucked. (Cheaper turkeys are wet plucked, which means they are dipped in hot water after slaughter to soften the feathers). Dry plucking does not damage the turkey's skin, and allows the turkeys to hang for several weeks to develop flavour in the same way as game is hung. Because they have natural fat marbled through the meat, these turkeys can cook in as little as two hours. The best method is to use a temperature probe - when it reads 75 degrees C on the thickest part of the leg or breast, the bird is cooked. The premium quality of these turkeys is apparent in the kitchen as soon as they are cooked - the smell of the meat is intense, the meat is tender and moist and the flavour is rich and savoury.
