There's no chicken so succulent as poussin, which is called the veal of chicken. The meat is tender, and all white. Cook for about 20 minutes in a hot (200degree) oven. Or spatchcock and barbecue, finishing off in the oven. Check the meat with a meat temperature probe, which should read 75 degrees C when the meat is cooked.
