Venison shank is the bony lower half of a deer's leg. It is traditionally used to produce soups and stocks, but if you allow one shank per head it can also provide a portion of delicious meat. As with any bony cut, it requires slow cooking. Shanks vary in weight, but average about 300g. Each shank provides a portion of meat for one person.
