If chicken is your bird of choice we have a full range of gourmet pasture-fed free range chickens and extra large free range chickens reared here in County Down, Northern Ireland. The birds are reared outdoors in small flocks and their diet consists of grass and foliage, and some grain. They are fed on an all vegetarian grain diet - and the farm produces its own wheat, barley and corn to fatten the birds. Our free chickens are dry hung (game hung) for five days to improve the intensity of flavour, before being dry plucked on the farm. Dry plucking is a more expensive, time consuming process than the normal chicken factory method of wet plucking. Dry plucking carefully preserves the skin, and keeps it dry. This is what produces delicious crispy chicken skin when the bird is roasted, and contributes greatly to the marvellous taste of these birds.
