We offer fantastic Kelly bronze fresh free range turkeys, reared in County Down, Northern Ireland. Perfectly matured to give a delicate tenderness, these pasture fed turkeys develop a delicious flavour from being allowed to roam and graze on 160 acres of fresh grass. Grown to maturity slowly for best flavour, our free range bronze turkeys are reared especially for Christmas, and are available only in December.  


Our bronze turkeys are from the famous Kelly Bronze stock, but it's not just their aristocratic pedigree make these birds the choicest heritage turkeys available. The birds feed on a diet of grains, wheat, as well as a high percentage of native grasses, seeds and insects.  Each bird is processed by hand to maintain the highest quality.  This results in a superb bird with a naturally firm and moist meat, with an authentic deep slightly gamey turkey flavour.  


Our free range Turkeys are now grazing on lush grass and will be finished on farm grown wheat in November. Fresh turkeys will be available for delivery or collection from 9th December onwards.  You can place a pre-order for a fresh free range turkey now, but please note that fresh turkeys will ONLY be available for delivery or collection from 9th December onwards.

Please note, our fresh turkeys are fattened especially for Christmas and are only available from early December each year.  We freeze any turkeys which have not been sold on Christmas Eve.  From January to early December the turkeys we have available for sale will be frozen.

Details

The turkeys start life as chicks at the renowned Kelly Bronze turkey farm in Essex. They are imported to County Down in May, and live a free range life for 6 months. They are fed on pellets, corn and wheat grown on the farm, and scratch and forage on 160 acres of lush pasture. They reach maturity slowly (compare their 24 weeks of life, to the 10 weeks it takes an indoor reared turkey to reach the same weight) and this longer life allows their bones to mature, and for the meat to develop a proper marbling of fat. These bronze turkeys are dry plucked. (Cheaper turkeys are wet plucked, which means they are dipped in hot water after slaughter to soften the feathers). Dry plucking does not damage the turkey's skin, and allows the turkeys to hang for several weeks to develop flavour in the same way as game is hung. Because they have natural fat marbled through the meat, these bronze turkeys can cook in as little as two hours. The best method is to use a temperature probe - when it reads 75 degrees C on the thickest part of the leg or breast, the bird is cooked. The premium quality of these turkeys is apparent in the kitchen as soon as they are cooked - the smell of the meat is intense, the meat is tender and moist and the flavour is rich and savoury.

What size of turkey to order?

We recommend ordering .675g of turkey on the bone per head. Our smallest turkeys are 10lb (4.5kg) and the largest are 22lb (10kg).
